Ingredients
  

  • 300 g pork shoulder or loin Thinly sliced against the grain for tender texture
  • 2 tbsp soy sauce Adds umami and savory depth to the marinade
  • 1 tbsp fish sauce Traditional Vietnamese flavor; strong but essential
  • 1 tbsp lime juice For brightness and balance
  • 1 tbsp honey (or brown sugar) For sweetness to balance the saltiness
  • 1 garlic clove, minced Freshly minced for best flavor
  • 1 tsp grated fresh ginger Adds a warm, slightly spicy note
  • 1 tsp sriracha (optional) For a gentle kick of heat

Equipment

  • 1 Mixing bowl for marinating the pork
  • 1 Skillet or grill pan for cooking the meat
  • 1 Knife to slice vegetables thinly
  • 1 Cutting board for prepping veggies and meat
  • 1 Tongs or spatula for flipping meat

Method
 

  1. Mix all the marinade stuff in a bowl, toss in the pork, and let it sit—15 minutes is good, longer is even better.
  2. While the pork’s marinating, just toss the carrots, cucumber, and radish in vinegar, sugar, and a pinch of salt. Set it aside.
  3. Heat a pan with a bit of oil. Cook the pork slices on medium-high heat until they’re browned and smell amazing—just a few minutes.
  4. Quickly heat them in a dry pan or microwave. You want them soft and bendy.
  5. Spread a little mayo on each tortilla, pile on the pork, pickled veggies, fresh cilantro, maybe some jalapeño slices. Done!
  6. That’s it—fresh, punchy, and full of flavor. Eat right away while it’s warm!
