Ingredient Scaling
⚠ Leavening note: Baking powder and baking soda don't scale perfectly linearly. For a scale factor above 1.5×, reduce leavening by ~10–15% from the calculated amount to avoid a metallic taste. For 2× or more, use 75% of the calculated amount and test.

When moving to a smaller pan, batter will be deeper — lower oven temp by 25°F and check doneness 10–15 min earlier.
When moving to a larger pan, batter will be shallower — bake time is usually shorter. Check 10 min earlier.
Bundt & tube pans are designed for wet, dense batters — conversions to/from other shapes may affect texture significantly.
Cheesecakes need a springform pan for structural support — swapping shapes is not recommended.
Always test doneness with a toothpick or skewer — it should come out clean or with a few moist crumbs.
Eggs can't be fractioned easily — always round to the nearest whole egg and adjust other wet ingredients proportionally.
A 9" round pan ≈ an 8" square pan — nearly identical areas, safe to swap without changing the recipe.
